Constructed of a polyamide nylon designed for Matfer Bourgeat, Exoglass® provides very high heat conductivity with very low heat retention. We use Exoglass to craft responsive baking molds and durable, cool-touch utensils.

Initially prototyped for aerospace environments, Exoglass® has a high strength-to-weight ratio and nonporous structure. It resists dents, cracks, or deformations during heavy commercial kitchen use.

Smooth and nonabsorbent, Exoglass® won’t hold food odors from one preparation to the next. Single-piece, injection molded construction means fewer seams or rivets where food and bacteria can hide.

Made without black plastic, PTFE, PFOA, heavy metals, or other forever chemicals, Exoglass® products are all fabricated at Matfer’s ISO 1400-certified factory in Longny-au-Perche, France. All Exoglass® products are certified food safe by NF in Europe and NSF in the USA.

Exoglass® is designed to transfer heat quickly, making it great for the oven as well as the blast freezer. Use your Exoglass® products within their official heat range of -20 to 200 degrees Celsius, or -4 to 482 degrees Fahrenheit.

Yes. If you use nonstick cookware, Exoglass® utensils are a great choice and will not damage your pan’s nonstick coating. Exoglass® utensils are a great choice if you need a durable, rigid spoon or spatula but want to avoid steel or aluminum utensils on your nonstick cookware.

Exoglass® is a nonporous material specifically designed to avoid transferring odors between preparations. No garlicky aromas in your chocolate babka ever again.

While steel molds can rust and aluminum can warp in humid environments, Exoglass’s® non-porous, non-reactive properties make it a smart choice for proofing boxes and steam ovens.

Yes. Exoglass® is safe to wash in both commercial and home dishwashers.

Exoglass® products do not have any chemical nonstick coatings. While its nonreactive and nonporous properties make it naturally more nonstick than uncoated metal mold, Exoglass® achieves an easier release without relying on chemical coatings that can degrade or pose potential health concerns.

Exoglass® baking molds are not, however, as nonstick as chemically coated baking molds. Whether you choose to use parchment paper, a swipe of butter, or nothing at all depends on what you are baking.

Yes. Every Exoglass® product sold in the US is NSF certified.

Exoglass® products are light-lift on care and cleaning. We recommend users respect the product’s maximum heat rating, and avoid cleaning with highly abrasive scrubbing, like steel or copper wool. Otherwise, let them cook.

Our European Union NF and US NSF certifications affirm that our products meet high standards for durability and sustainability. Exoglass® does not de-gas, degrade, or break down during standard usage. Like any other tool, individual products can chip or scratch with rough usage, or discolor with strongly colored ingredients. Exoglass® is a single, stable, inert nylon polyamide. It is free of PFAs, PTFE, heavy metals, recycled materials, black plastic, forever chemicals, and all other chemical coatings.

The same heat transfer properties that make Exoglass® a great baking material allow it to stay cool in your hand over the stovetop.

For example: If you left a Matfer Whisk with Exoglass® handle in a sauce pan over an open range, and the utensil got hot, the Exoglass® handle will cool down to a comfortable temperature almost instantly when the pot is removed from the heat source.

Exoglass’s® quick-cooling and durable characteristics makes it a high-performance choice in our factory for a variety of hot-line utensils including spatulas, spoons, and whisks.
